Head of Gastronomy (M/F) – Permanent Contract 90-100%
Summary of duties:
The Head of Gastronomy manages the Gastronomy department of the Crans-Montana ski area, which includes ten mountain restaurants (fast food, full-service dining, bars and events).
They define and implement the culinary and operational vision, supervise teams, offerings, capacities and financial performance, and ensure a consistent and quality customer experience.
The position reports directly to the General Manager and plays a key role within the management team.
Responsibilities:
- Drive the operational performance of the establishments and ensure compliance with company standards, procedures and policies.
- Recruit, train and develop high-performing teams in a demanding and seasonal environment.
- Manage stocks and purchasing: inventory strategy, quality control, compliance, safety and equipment maintenance.
- Implement effective operational practices to improve productivity and quality.
- Monitor key performance indicators (KPIs) and implement necessary corrective actions.
- Coordinate large-scale events and ensure their operational success.
- Ensure financial management of the units: budgets, results monitoring, cost control and profitability improvement.
- Define and deploy the development strategy in line with management, taking into account market trends and growth opportunities.
Professional requirements:
- Excellent command of French and English; Italian is an asset.
- Proven experience in catering or a similar management role, ideally in an alpine environment.
- Good knowledge of winter sports and leisure sectors.
- Strong skills in management, organisation and performance management.
- Mobility between different mountain sites.
- Proficiency in common IT tools (MS Office, Lightspeed, etc.).
- Training in hotel management or equivalent is appreciated.
